Aubergine filled with meat, tomatoes and mozzarella. Simply delicious!
Ingredients
- 2 aubergines
- 100g cherry tomatoes
- 1 mozzarella
- 150g minced meat
- salt and pepper
- garlic
- 80g parmigiano
- 1 egg
- basil
Directions
- Cut the aubergines in half, lengthways and scoop out the middle of each aubergine, leaving a 2cm border. Seasoning the boats.
- Cut the flesh into small cubes, add salt and set to one side.
- Cut into small pieces tomatoes and mozzarella. Finely chop the garlic.
- Squeeze the flesh and place in a large bowl. Add in the minced meat, seasoning.
- Add in and stir the egg.
- Stir in tomatoes, mozzarella, parmigiano and basil. Drizzle with olive oil.
- Divide the filling between each of the four aubergines.
- Sprinkle with Parmesan and a drizzle of oil.
- Bake covered for 1 hour at 180°C, then grill until golden and crisp.
