Aubergine boats

Aubergine filled with meat, tomatoes and mozzarella. Simply delicious!


Ingredients

  • 2  aubergines
  • 100g  cherry tomatoes
  • 1 mozzarella
  • 150g minced meat
  • salt and pepper
  • garlic
  • 80g  parmigiano
  • 1 egg
  • basil

Directions

  1. Cut the aubergines in half, lengthways and scoop out the middle of each aubergine, leaving a 2cm border. Seasoning the boats.
  2. Cut the flesh into small cubes, add salt and set to one side.
  3. Cut into small pieces tomatoes and mozzarella. Finely chop the garlic.
  4. Squeeze the flesh and place in a large bowl. Add in the minced meat, seasoning.
  5. Add in and stir the egg.
  6. Stir in tomatoes, mozzarella, parmigiano and basil. Drizzle with olive oil.
  7. Divide the filling between each of the four aubergines.
  8. Sprinkle with Parmesan and a drizzle of oil.
  9. Bake covered for 1 hour at 180°C, then grill until golden and crisp.
