Mini Plumcake

Golden brown mini Plumcakes, perfect for an healthy breakfast!

Ingredients:

  • Eggs 2
  • Sugar 120gr
  • Flour 150gr
  • Potato starch 50gr
  • Yogurt 125gr
  • Seed oil 100ml
  • Baking powder 8gr
  • Milk ( if necessary)
  • Dark chocolate

Directions:

  1. Sift together flour, potato starch flour and baking powder. Set aside.
  2. In a medium bowl, whisk together eggs and sugar until combined.
  3. Mix in oil, yogurt and flour. Gently mix until all the flour is off the bottom of the bowl and no big pockets of flour remain.
  4. Gently add in chocolate chips.
  5. Divide batter among prepared plumcake tins.
  6. Bake at 175° for 20/25 minutes.
