Golden brown mini Plumcakes, perfect for an healthy breakfast!
Ingredients:
- Eggs 2
- Sugar 120gr
- Flour 150gr
- Potato starch 50gr
- Yogurt 125gr
- Seed oil 100ml
- Baking powder 8gr
- Milk ( if necessary)
- Dark chocolate
Directions:
- Sift together flour, potato starch flour and baking powder. Set aside.
- In a medium bowl, whisk together eggs and sugar until combined.
- Mix in oil, yogurt and flour. Gently mix until all the flour is off the bottom of the bowl and no big pockets of flour remain.
- Gently add in chocolate chips.
- Divide batter among prepared plumcake tins.
- Bake at 175° for 20/25 minutes.
